Iced Sugar Cookies

I have a tiny kitchen - far too small to manage all of the cooking we do and storage space is at a premium. Though I am not a minimalist by nature, I am forced to be just because there is no where to put everything. Pots and pans and utensils are kept to a minimum (within the confines of still having to cater for large events), I can’t stand extra appliances on the counters and no one is allowed in when I am cooking.

Even within this though, I still have one whole drawer dedicated to my collection of cookie cutters. I buy a few every year and they only come out for this one recipe we make around Christmas As a kid, making cut-out cookies was always my favourite. I loved going through the box of cutters and choosing which ones to use and it is my kids’ favourite as well.

This year we have barely done anything Christmassy. I am feeling it even less so than a normal year. But tradition calls and a batch of these is on the cards for today.

Iced Cut- Out Cookies

Iced Cut-Out Cookies are our Christmas favourite.

Ingredients

For the Cookies
  • 200g (1 1/2 US Cups) unsalted butter, softened
  • 200g (1 US Cup) caster sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 360g (3 US cups) plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
For the Icing
  • 300g (3 US cups) icing sugar
  • 2 TBSP Water
  • food colouring

Method

  1. In a mixer or by hand, cream the butter and the caster sugar until the mixture is light and fluffy.
  2. Add the eggs and vanilla until mixed well.
  3. Add the flour, baking powder and salt and mix until combined.
  4. Wrap dough in cling film and chill for 1 hour in the refrigerator.
  5. Preheat the oven to 180c/360f.
  6. Roll out the dough to approximately 1/2cm or 1/4in thick. Cut out shapes using cookie cutters.
  7. Bake on lined baking trays for approximately 5 minutes, until the edges of the cookies are lightly browned.
  8. Leave to cool completely.
  9. Mix the icing sugar and water into a paste. Separate into bowls for colouring.
  10. Ice.
  11. Let the icing set and then eat!
