Making Flavouring Extracts

Flavour Extracts

These are so easy to make. The process is the same for whatever extract you are making and there is no hard and fast rules to the amounts. I usually start by picking the jar I am going to make them in, then filling it loosely with the favour, then topping it off with alcohol.

To get the most flavour, you need to let them sit for about a month. If you need to give them before that, simply give it on with instructions for straining it.

Vanilla Extract

Ingredients

3 to 5 vanilla beans

225ml alcohol such as vodka or rum (don’t use anything top shelf here, just the cheapest you can find)

Equipment

Cutting board and knife

Clean jar or bottle

Instructions

1.    Split each vanilla bean in half lengthwise.

2.    Place the vanilla beans in a clean jar or bottle. Cover them with alcohol, making sure they are completely submerged. Cover the jar or bottle and give it a good shake.

3.    Store the jar or bottle of vanilla beans in a cool, dark place for at least one month, shaking it from time to time. Taste the extract and let it infuse longer if you want a stronger flavour.

4.    You may wish to remove the vanilla pods and decant the extract into a pretty bottle. You can also leave the beans in the alcohol and top off the bottle as you use the extract, though after awhile you will need to refresh the pods as all the flavour will be extracted.

Almond Extract

Ingredients:

25g of slivered almonds

150ml of vodka

Method:

  1. Fill a small jar with the almonds, not too tightly packed.

  2. Top off the jar with your vodka.

  3. Let it steep for 4 weeks and then test. If its ready, strain and decant the extract into a pretty bottle.

Orange Extract 

Ingredients:

the rind of 1 orange

200 ml vodka.

Method:

  1. Roughly chop your peel and place in a small jar, not too tightly packed.

  1. Top off the jar with your vodka.

  2. Let it steep for 4 weeks and then test. If its ready, strain and decant the extract into a pretty bottle.

Mint Extract  

Ingredients:

25g garden mint

150 ml vodka. 



Method:

  1. Roughly chop your mint and place in a small jar, not too tightly packed.

  2. Top off the jar with your vodka.

  3. Let it steep for 4 weeks and then test.  If its ready, strain and decant the extract into a pretty bottle. 


NOTE: If you don’t want to use alcohol, you can also use 3 parts glycerine and 1 part water.
