Jeni's Carrots

Makes 1ltr Jar


Ingredients:

2-3 carrots, peeled and quartered

1 tbsp sea salt

1 5cm chunk of ginger

1 clove of garlic


Equipment:

1ltr Jar with clip lid


Method:

1. Place ginger and garlic in the bottom of a 1ltr jar

2. Place carrots on top and fill jar with water.

3. Add 1Tbsp of salt to jar and cover.

4. Leave on the counter to ferment for 7 days then place in fridge.

Shelf-life: 

Keeps for up to 6-8 weeks in fridge.
