Is there anything better than bread and cheese?
This weekend course will teach you the basics of making these two perfect partners in your own home.
Over the course of the weekend, you will:
Learn how to take care of a sourdough starter
Learn tips for fitting sourdough bread baking into your schedule (its a lot easier than it sounds)
Learn techniques for shaping, scoring and baking your bread
Using cultures and rennets to make your own cheese
Fresh cheese making
Basic ageing techniques
Kefir and Kefir products
Every workshop participant will leave with a sourdough starter, recipes, a banneton, 1kg of our favourite flour, a loaf of bread and assorted baked goods and cheeses from our weekend together.
You will learn the techniques you need to really understand the sourdough process, from starter to bake. We will cover a range of recipes throughout the weekend to give you the skills you need in using sourdough in your every day life and to make cheese at home.
Friday Evening: Farm to Table Welcoming Dinner for residential guests.
Saturday 1030 - 4pm: We will work on a cultured cheese, but spend most of the day on sourdough bread. We will start a basic sourdough loaf, an enrinched loaf and a pastry. Lunch provided.
Evening Meal for residential guests and any day guests who would like to join.
Sunday: 10am - 330pm - then continuing with our breads and cheeses, we will focus on quick recipes for both that need less prep time and fresher ferments.
For those travelling from afar, we offer 2 types of accomodation. Single occupancy double rooms in the farm house itself or shared twin rooms in the adjacent holiday cottage. Day tickets are also available. Friday night dinner, Saturday breakkfast, lunch and dinner and Sunday breakfast and lunch provided. Day ticket does not include the Friday night dinner.
Located just off the A811 near Arnprior, we are just 14 miles from Stirling and Milngavie.
